Freezer Meals




All of these recipes can be made ahead and frozen.  These are great recipes to bring to a new mom, or to stock your freezer before welcoming a new baby.  If you really want to save time, double the recipe when you cook dinner and freeze half to eat later.  Enjoy!

Freezer Egg and Cheese Breakfast Bagels





Freezer Egg and Cheese Breakfast Bagels


8 whole wheat bagel thins
8 eggs
8 slices cheddar cheese
salt and pepper to taste


Optional additions:
Sliced ham
sausage patties
bacon


Preheat oven to 350 degrees.  Spray 8 sections of a large size muffin tin with cooking spray.  Crack an egg in each section.  Bake for 10 - 15 minutes, until eggs are set.  Sprinkle with salt and pepper to taste and allow to cool.


Meanwhile, separate each bagel thin.  Place one slice of cheese on bottom layer of each.  Remove eggs from muffin tin by loosening the edges with a knife.  Place one egg on top of cheese on each bagel thin.  Top with bagel top.  


*After cooling completely, bagels can be wrapped in foil, placed in freezer bags, and kept frozen.  Remove from freezer and reheat in microwave until cheese is melted and eggs are heated through.

Copycat Cinnabon Cinnamon Rolls





Copycat Cinnabon Cinnamon Rolls - slightly adapted from allrecipes



  • 1 cup warm milk (110 degrees F/45 degrees C)
  • 2 eggs, room temperature
  • 1/3 cup margarine, melted
  • 2 1/2 cups bread flour
  • 2 cups whole wheat flour
  • 1 teaspoon salt
  • 1/2 cup white sugar
  • 2 1/2 teaspoons bread machine yeast
  •  
  • 1/2 cup brown sugar, packed
  • 1 1/2 tablespoons ground cinnamon
  • 1/3 cup margarine, softened
  •  
  • 1 (3 ounce) package cream cheese, softened
  • 1/4 cup margarine, softened
  • 1 1/2 cups confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.

  • After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.

  • Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees..

  • Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup margarine, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.

Biscuits and Sausage Gravy

For biscuits
2 cups flour
1 tbs baking powder
1 tsp salt
1 stick cold salted butter, cut into 1/2" slices
3/4 cup cold 2% milk


For gravy
1 lb bulk breakfast sausage
1/2 cup flour
4 cups 2% milk
1/4 tsp salt
1/8 tsp pepper
cayenne pepper (optional)


First prepare the biscuits. Heat the oven to 400°. In a large bowl, sift together the flour, baking powder, and salt. Use a pastry blender* or two butter knives to cut the butter into the mixture until it has a coarse, pea-size texture. Add the milk and stir the mixture until it forms into a shaggy dough.


 Turn the dough out onto a floured surface. Use your fingers to gently flatten it into a 1/4-inch-thick rectangle. Fold the dough over itself and flatten it once more. Repeat three or four times, working quickly so that the butter remains solid.


Flatten the dough a final time, then use a 3-inch biscuit cutter or a drinking glass to cut out 10 dough rounds. Transfer them to a 12- by 17-inch baking sheet and bake them until golden brown, about 15 to 20 minutes.


 While the biscuits cook, make the gravy. Brown the sausage in a medium skillet over medium heat. Drain all but 2 tablespoons of fat from the pan.


Slowly sift the flour into the pan as the meat continues to cook. Use a wooden spoon or a spatula to work the flour into the meat.   Add the milk, then let the mixture simmer, stirring constantly, until it begins to thicken. Add the salt and pepper and let the gravy continue to simmer as you stir, until it reaches the consistency of a creamy soup. Be sure to maintain medium heat so that the mixture doesn't boil. If the gravy becomes too thick, thin it with more milk, adding a small amount at a time.


Add a few pinches of cayenne, if using, and more salt and pepper, if needed, and stir in well. To serve, put a biscuit on a plate and ladle the gravy alongside or on top.

Banana Chocolate Chip Muffins

3 medium bananas
1 egg
1/3 cup milk
1/2 cup sugar
1/2 cup brown sugar
1 1/2 cups whole wheat flour
1 tsp baking soda
1 tsp salt
1/2 cup chocolate chips

Preheat oven to 350 degrees.  Lightly coat muffin tin with cooking spray.  In a large bowl, mash bananas with fork.  Whisk in egg, milk, sugar, and brown sugar.

In a separate bowl, mix flour, baking soda, and salt.  Add flour mixture to banana mixture and mix well.  Fold in chocolate chips.  Bake for 30 minutes, or until a toothpick inserted comes out clean.

Breakfast Sandwich Thins



Breakfast Sandwich Thins

4 whole wheat sandwich thins
4 eggs
4 slices turkey bacon, cooked
4 slices Swiss cheese

Spray a skillet with cooking spray.  Heat skillet on medium heat; fry egg until the bottom is cooked, about 3 - 4 minutes.  Flip.  Cook for 2 - 3 minutes.  Repeat with remaining eggs.

To assemble sandwiches:
Open sandwich thin; place one fried egg, one slice of turkey bacon broken in half, and one slice of Swiss cheese on bottom of sandwich thin.  Top with remaining sandwich thin.  Repeat with remaining ingredients.  These freeze well - just wrap in foil or plastic wrap and place in a freezer bag.  Easy to grab, defrost, and go!

Bacon, Egg, and Cheese Breakfast Casserole



Bacon, Egg, and Cheese Breakfast Casserole

1 package refrigerated crescent rolls
6 slices bacon, cooked and crumbled
6 eggs, beaten
3 tbs milk
1/4 tsp salt
1/2 tsp pepper
1 cup shredded cheddar cheese

Grease a 9" x 11" baking dish.  Unroll the crescent roll dough in the bottom of the baking dish and press seams together to form a crust. Sprinkle with crumbled bacon.  In a bowl, mix eggs, milk, salt and pepper . Pour over crescent roll dough.  Sprinkle evenly with cheese.  At this point, you could cover and place in the refrigerator overnight if necessary.

Bake at 400 degrees for 20 - 25 minutes, or until eggs are set and toothpick inserted in the center comes out clean.

Fluffy Biscuits



Fluffy Biscuits - Allrecipes

2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon white sugar
1/3 cup shortening
1 cup milk
  
Preheat oven to 425 degrees F.  In a large bowl, whisk together the flour, baking powder, salt, and sugar. Cut in the shortening until the mixture resembles coarse meal. Gradually stir in milk until dough pulls away from the side of the bowl. 

Turn out onto a floured surface, and knead 15 to 20 times. Pat or roll dough out to 1 inch thick. Cut biscuits with a large cutter or juice glass dipped in flour. Repeat until all dough is used. Brush off the excess flour, and place biscuits onto an ungreased baking sheet. 

Bake for 13 to 15 minutes in the preheated oven, or until edges begin to brown.

Breakfast Crescents



Breakfast Crescents

1 package crescent rolls
3 eggs
2 tbs milk
1 tbs margarine
1/3 cup shredded cheddar cheese
3 slices turkey bacon, cooked and crumbled

Preheat oven according to package directions.  Combine eggs and milk in a bowl.  Whisk well.  Melt margarine over medium heat. Scramble eggs until cooked through.  Add in cheese and crumbled bacon.

Unroll and separate crescent rolls onto an ungreased cookie sheet.  Place 2 - 3 tablespoons of egg mixture onto each crescent roll. Roll each crescent.  Bake according to package directions.

Bacon, Egg and Cheese Breakfast Bagels



Bacon, Egg and Cheese Breakfast Bagels

12 slices turkey bacon, cooked
6 eggs, scrambled
6 slices Swiss cheese
12 whole wheat mini bagels

Separate each bagel.  Assemble half a slice of cheese, 2 tbs eggs, and 1 slice of bacon broken in half.  Top with bagel top.  These freeze well - just defrost in the microwave.

3 eggs
1 1/2 cup buttermilk
1/2 cup vegetable oil
1 3/4 cup whole wheat flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Combine all ingredients and cook according to waffle iron directions.

1 1/4 cups whole wheat flour
1 tbs sugar
1 tbs baking powder
1/4 tsp salt
2 eggs
1 cup milk
4 tbs melted margarine
3/4 tsp vanilla
1 cup semi-sweet chocolate chips

Heat skillet or griddle to medium heat.  Combine flour, sugar, baking powder and salt in a large bowl.  Mix together wet ingredients and beat into dry mixture until smooth.  Fold in chocolate chips. 

Pour 1/4 cup batter into skillet.  Cook until pancake begins to bubble.  Flip and cook for about one minute on other side. Repeat with remaining batter.  Top with butter, syrup, or whipped cream.

Old-Fashioned Pancakes

1 1/2 cups whole wheat flour
3 1/2 tsp baking powder
1 tsp salt
1 tbs white sugar
1 1/4 cups milk
1 egg
3 tbs melted margarine

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth. 

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

7 eggs
3 tbs milk
5 slices deli ham, diced
1/2 cup shredded cheddar cheese

Preheat oven to 350 degrees. Spray 12 muffin tin cups with cooking spray. In a large bowl, whisk eggs and milk together.  Stir in ham and cheese.  Divide evenly in muffin tin.  Bake for 20 minutes or until set.

Hash Browns with Eggs, Bacon, and Cheese



Hash Browns with Eggs, Bacon, and Cheese

2 russet potatoes
2 eggs
2 slices turkey bacon
3 tbs olive oil
3/4 cup cheese
sea salt
pepper

Wash and scrub potatoes. Dry well.  Poke holes in each potato with fork.  Cook in microwave for 3 - 5 minutes, until cooked through.  Allow potatoes to cool slightly.  Peel skins off and dice into cubes.

Meanwhile, chop turkey bacon and cook in a pan until crisp.  Remove to a plate.  In same pan, place oil and potatoes.  Cook potatoes for 3 minutes, then flip.  Cook for 1 minute.

Make two holes in the potatoes and crack an egg in each hole.  Cover with lid until egg begins to set, about 3 minutes.  Sprinkle bacon and cheese on top.  Cover with lid again until egg is set.

Whole Wheat Oatmeal Pancakes

2 cups milk
1 1/2 cups oats
1 cup whole wheat flour
1/4 cup wheat germ
2 tbs brown sugar
1 tbs baking powder
1/2 tsp sea salt
2 eggs, beaten
1/4 cup vegetable oil

In bowl, pour milk over rolled oats; let stand for 5 minutes.   In another bowl, stir together flours, wheat germ, sugar, baking powder and salt.

Beat eggs and oil together; add to dry ingredients along with milk/oats mixture, stirring just until mixed (if batter is too thick, add a little more milk).

Heat a large greased skillet over medium to med-high heat.  Pour in about 1/4 cup batter for each pancake and cook for about 2 minutes or until bubbles on top break but do not fill in, and bottoms are golden and set.  Flip and cook until set.  Serve with butter and syrup.

Caramel Syrup



Caramel Syrup - Our Best Bites

3/4 cup buttermilk
1 1/2 cups sugar
1 stick butter
2 tbs corn syrup
1 tsp baking soda
1 tsp vanilla

Combine buttermilk, sugar, butter, corn syrup, and baking soda in a LARGE pot.
Bring ingredients to a boil and reduce heat to low (as long as it's still bubbling, you're okay). Cook, stirring very frequently, for 8-9 minutes.

When it's done, it should be golden brown. Remove from heat and add vanilla.  Serve warm over pancakes, waffles, or ice cream.

Another Whole Wheat Pancake Recipe

1 tbs honey
3 tbs vegetable oil
2 large eggs
1 cup buttermilk
1 cup whole wheat flour
2 tsp baking powder
1/2 tsp kosher salt
margarine

Stir honey and oil together in a bowl.  Add milk and eggs and beat well. Mix dry ingredients into the liquid mixture and stir until moistened.  

Heat pan over medium heat.  Melt a few tablespoons of margarine.  Drop about 1/3 cup of batter for each pancake.  Cook until top begins to bubble; flip.  Add more margarine between each batch of pancakes.  Cook remaining batter.

2 cups milk

Combine flour, sugar, baking powder, and salt.   Add milk, eggs, vegetable oil and vanilla extract.  Bake on waffle iron according to manufacturer's directions.

Baked French Toast Sticks

8 slices whole wheat bread
1/4 cup melted margarine
3 eggs
1/3 cup sugar
2/3 cup milk
1/2 tsp vanilla
cinnamon

Preheat oven to 350 degrees. Cut each slice of bread into thirds. Combine margarine, eggs, sugar, milk, and vanilla in a bowl.  Dip each piece of bread in the mixture, coating each side. Allow excess to drip off.  Place dipped bread onto a baking pan sprayed with cooking spray.  Sprinkle lightly with cinnamon.   Bake for 25 - 30 minutes, flipping half way through.  Serve with syrup, butter, or powdered sugar.
