Beef Stir Fry






Beef Stir Fry - adapted from Simple and Delicious July/August 2007


1 1/2 tsp sugar
1 tsp cornstarch
3/4 cup cold water
6 tbs reduced-sodium soy sauce
2 tsp sesame oil, divided
1 lb beef flank steak, cut into thin strips
1 8 oz jar whole baby corn, drained
1/4 cup carrots, diced
2 cups hot cooked brown rice


In a small bowl, combine sugar and cornstarch.  Stir in the water, soy sauce, and 1 tsp oil until smooth;  set aside.  In a large nonstick skillet or wok, stir-fry beef in remaining oil for 4 - 5 minutes, or until no longer pink.


Add the corn and carrots; stir-fry for 2 - 3 minutes, or until vegetables are crisp-tender.  Stir soy sauce mixture and add to the pan.  Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over hot rice.

Beef and Veggie Stir Fry



Beef and Veggie Stir Fry - adapted from food.com

1 lb stir fry beef
2 tbs water
2 tbs cornstarch
1/2 tsp garlic powder
2 tbs vegetable oil, divided
1/4 tsp red pepper flakes
1 cup carrots
1 cup broccoli
1/3 cup soy sauce
1/2 cup water
2 tbs brown sugar
1 tbs cornstarch
1/2 cups hot cooked brown rice

In a bowl, combine 2 tbs water and 2 tbs cornstarch.  Mix in garlic powder until smooth.  Toss beef in mixture until coated.  
In a large skillet or work over medium high heat, stir fry beef in 1 tablespoon vegetable oil until cooked through.  Remove and set aside.  

Add remaining tablespoon of oil to skillet.  Stir fry broccoli and carrots for 4 - 5 minutes.  Return beef to skillet.  Combine soy sauce, water, brown sugar, and one tablespoon of cornstarch in a bowl.  Add to skillet and cook for 2 minutes, stirring frequently.  Serve over hot brown rice.

Stuffed Round Steak and Gravy



Stuffed Round Steak and Gravy

4 pieces round steak, thinly sliced
4 tbs garlic, minced
1/4 cup breadcrumbs
Cajun seasoning to taste
2 tbs olive oil
1/4 cup finely diced onion
1/4 cup finely diced green  bell pepper
4 mushrooms, sliced
6 - 8 cups water
1 tsp Kitchen Bouquet
1 beef boullion cube

Lay each round steak flat.  Season both sides of round steak with Cajun seasoning to taste.  Spread 1 tbs garlic evenly over each piece.  Sprinkle with breadcrumbs.  Roll round steak up tightly. Secure with cooking string. Repeat with remaining round steaks.

In a large Magna-lite pot, brown round steak rolls in 1 tbs olive oil over medium high heat.  Turn round steaks until browned on all sides. Remove from pan.  

Turn heat down to medium low.  Add remaining 1 tbs olive oil and cook onions and bell peppers for 3 minutes.  Add water slowly, scraping up browned bits.  Add round steak rolls back to pot, making sure they are covered with water.  

Bring to a boil.  Add mushrooms, Kitchen Bouquet, and bouillon cube.  Reduce heat to medium low.  Cook for 2 - 3 hours. To thicken gravy, combine 1/4 cup water with 3 tbs cornstarch.  Mix slowly into gravy.  Repeat if necessary.  Serve over rice.

Bracioli (Stuffed Round Steak)



Bracioli (Stuffed Round Steak)

4 pieces of round steak, pounded thin
4 tbs garlic, minced
1/4 cup breadcrumbs
4 tbs grated Parmesan cheese
salt and pepper to taste
olive oil
spaghetti sauce

Lay each round steak flat.  Spread 1 tbs garlic evenly over each piece.  Sprinkle with breadcrumbs and Parmesan cheese.  Roll round steak up tightly. Secure with cooking string and toothpicks. Repeat with remaining round steaks.

Heat olive oil over medium-high heat in a pan.  Brown all sides of steaks.  Drop into spaghetti sauce; cook at least 2 hours, stirring occasionally.  Serve with spaghetti sauce and pasta.

Spicy Garlic Beef Enchiladas



Spicy Garlic Beef Enchiladas

1 lb stew meat
2 tbs olive oil
1 tbs minced garlic
1/4 tsp red pepper
1 tsp chili powder
3/4 cup water
10 yellow corn tortillas
1 can red enchilada sauce
1 1/2 cups Monterey jack cheese

Season stew meat with red pepper and chili powder; brown well in olive oil. Add garlic and cook for 1 minute. Add water.  Bring to a boil, then reduce heat to low and cover.  Cook for 45 minutes, stirring often.  Add more water as needed.

Preheat oven to 350 degrees.  Heat 3 corn tortillas at a time in the microwave between moistened paper towels for 30 seconds.  Place a scoop of stew meat in tortilla; sprinkle with cheese and roll up.  Place in a greased 9" x 13" baking dish.  Repeat with remaining tortillas.  

Pour enchilada sauce over rolled up tortillas.  Sprinkle with remaining cheese. Bake for 20 minutes.

Flank Steak with Bacon Sauce



Flank Steak with Bacon Sauce - adapted from Food Network

1 flank steak, about 1 1/4 lbs
3 tbs olive oil
pepper
Cajun seasoning
garlic powder
4 slices turkey bacon, diced 
1 cup reduced sodium beef broth
2 tbs Worcestershire sauce
2 tbs cornstarch
3 tbs water

In a large pan, heat olive oil over medium high heat.  Sprinkle pepper, Cajun seasoning, and garlic powder liberally over both sides of flank steak.  Cook for 6 - 8 minutes per side.  Remove and let sit for 10 minutes before slicing.

Meanwhile, cook diced bacon over medium heat until crispy.  Add beef broth and heat until boiling.  Reduce to medium low. In a small bowl, combine cornstarch and water.  Whisk slowly into beef broth mixture. Cook for 5 minutes, stirring frequently.  Serve sauce over flank steak.

Baked Beef Taquitos



Baked Beef Taquitos - adapted from Our Best Bites

 1 lb ground beef or turkey
1 tbs chili powder
1 tsp Cajun seasoning
1 tsp garlic powder
Monterey jack cheese, shredded
corn tortillas
kosher salt

Brown ground beef over medium heat.  Drain. Stir in chili powder, Cajun seasoning, and garlic powder.  

Working with a few tortillas at a time, heat tortillas in the microwave between damp paper towels for 30 seconds.  Place 2 - 3 tbs of beef  onto the lower third of each tortilla, leaving 1/2" from the edges.  Sprinkle with cheese.

Preheat oven to 425 degrees.  Roll up tightly and place seam side down on baking sheet, making sure tortillas are not touching.  Spray the tops with cooking spray and sprinkle lightly with kosher salt.   Bake for 15 - 20 minutes, or until crisp and the ends start to get golden brown.  Serve with sour cream or salsa.

Grilled Meatloaf


Grilled Meatloaf - Taste of Home Annual Recipes 2004

1/2 cup ketchup
1/2 cup quick-cooking oats
1 egg
1 tsp parsley
1 tsp Worcestershire sauce
12 tsp garlic powder
1/2 tsp dried basil
1/4 tsp pepper
2 lbs ground beef

In a large bowl, combine the first 8 ingredients. Crumble beef over mixture and mix well.  Shape into two loaves.  Place a sheet of heavy-duty foil in center of grill. Place meat loaves on foil.

Grill, covered, over indirect medium heat for 50 minutes or until meat is no longer pink and a meat thermometer reads 160 degrees. Brush tops with bbq sauce if desired.  Let stand for 1 minutes before slicing.

Upside Down Meatloaf



Upside Down Meatloaf

1/2 cup brown sugar
1/4 cup ketchup
1/4 cup bbq sauce
1/2 lb ground turkey(you could do all ground beef or ground pork)
1/2 lb ground beef
1 egg, beaten
3/4 cup breadcrumbs
1 tbs Cajun seasoning(less if you don't like heat)
1 tsp chili powder
1 tsp garlic powder
1/4 cup oats

Spray a 9" x 3" x 5" loaf pan well with cooking spray.  Press the brown sugar in bottom of pan.  Mix ketchup and bbq sauce together and spread over brown sugar.  

Mix all the remaining ingredients together and shape into a loaf.  Place on top of ketchup/bbq sauce mixture.  Bake at 350 degrees for one hour.  Turn upside down to serve.

Italian Crescent Casserole


Italian Crescent Casserole

1 pkg crescent rolls
1 lb ground meat
2 cups spaghetti sauce
1 cup shredded Parmesan cheese
1 tbs butter or margarine, melted
2 tbs grated Parmesan cheese

Cook ground meat until brown.  Drain fat.  Add two cups of spaghetti sauce to ground meat; stir until mixed.  Place ground meat in 8 x 8 baking dish.  Sprinkle with Parmesan cheese. Top with rolled out crescent rolls. Brush butter on top of crescent rolls, followed by Parmesan cheese.  Bake at 350 degrees for 20 minutes, or until golden brown on top.

Hamburger steak


Hamburger steak
1/2 lb ground beef
1/2 lb ground turkey
1 egg
1/4 cup oats
1/2 cup Italian breadcrumbs
1 tsp Cajun seasoning
1/2 tsp chili powder
1/2 tsp paprika
1/4 tsp garlic powder
2 tsp Worcestershire sauce
1 can beef broth

To thicken gravy:
3 tbs water
1 tbs cornstarch

Heat pan over medium heat. Mix all ingredients well in a large bowl.  Form into 4 oval patties.  Brown on each side for 4 - 6 minutes.  Turn down heat slightly; deglaze pan with beef broth. Stir.  Bring to a boil; reduce heat to medium low.  Squirt a little Worcestershire sauce on top of each patty.  Cover and cook for 5 minutes.  Flip patties.  Squirt Worcestershire sauce on the other side of each patty.  Cover.  Cook for 5 minutes.

To thicken gravy, place 3 tbs of cold water in a bowl.  Add 1 tbs cornstarch and stir well.  Add slowly to gravy.  Stir well.  Repeat if necessary to get gravy to desired thickness.  Serve with mashed potatoes.

Shepherd's Pie


Shepherd's Pie

1/2 lb. ground beef
1/2 lb. ground turkey
1 tsp. Cajun seasoning
1 tbs. chili powder
2 tbs. Worcestershire sauce
6 medium red potatoes, peeled and quartered
2/3 cup low fat milk(add more as needed)
4 oz. cream cheese
3 tbs. margarine
1 can corn
3 - 4 oz. shredded cheese

Boil water for potatoes in large pot.  Meanwhile, brown ground beef and turkey. Drain fat. Rinse if desired to eliminate more fat.  Add Worcestershire sauce, Cajun seasoning and chili powder.  Set aside.

Boil potatoes for 15-20 minutes, or until fork tender.  Drain.  Add potatoes back to pot.  With heat on low, mash potatoes for 2 minutes, removing as many lumps as possible.  Add milk, cream cheese, and margarine.  Salt and pepper to taste.

Preheat oven to 350".  In a greased 8" dish, layer ground meat, corn, potatoes, and cheese.  Bake uncovered for 15-20 minutes, or until cheese is melted and begins to bubble.

Sausage Beef Ravioli


Sausage Beef Ravioli

1 lb. mild Italian sausage
2 cups spaghetti sauce(homemade or jarred...homemade is better! :) )
1 bag frozen beef-filled ravioli
Parmesan cheese

Cook ravioli according to package directions.  In a saucepan, brown sausage.  Drain and rinse to get rid of the fat.  Return sausage to pan.  Add spaghetti sauce and cook over medium heat until heated through.  Serve spaghetti sauce over ravioli. Sprinkle with Parmesan cheese.

Zesty Hamburgers















Zesty Hamburgers

1/2 lb. ground turkey
1/2 lb. ground beef
1 egg
1 cup breadcrumbs(more as needed)
1 tsp. Cajun seasoning
1 tsp. garlic powder
1/2 tsp. paprika
1 tsp. Montreal steak seasoning
1 tbs. Worcestershire sauce
1 tsp. A-1 steak sauce

Mix well.  Form mixture into 4 burgers.  Grill over medium heat approximately 15-20 minutes, or until cooked through.  I served this on homemade buns using this recipe.

Herbed Pot Roast


Herbed Pot Roast - adapted from Pioneer Woman's recipe

1 3-4 lb. pot roast
4 tbs olive oil, separated
1 tbs kosher salt
1tbs Cajun seasoning
1 tbs chili powder
1 tsp dried rosemary
1 tsp dried thyme
1 can beef broth
3 carrots, cut into chunks

Heat oven to 375 degrees.  Season roast with kosher salt, Cajun seasoning, and chili powder.  Heat 2 tbs olive oil over medium high heat in large oven safe pot.  Brown roast well on all sides.  Remove and set aside.

Add remaining 2 tbs of olive oil to pot.  Cook carrots just long enough to give them a little color. Deglaze pot with beef broth.  Add roast and carrots back to pot.  Add enough water to cover roast half way.  Season with rosemary and thyme.  Cover and bake for 1 hour per pound of roast.  Serve with mashed potatoes or rice.

Cheddar Stuffed Mini Meatloaf

This is a combination of a few different recipes that I've made in the past.  My husband loves my mini meatloaf recipe and would literally eat it twice a week.  I like it too, but I needed a little change from the usual recipe, so I decided to add cheese to change it up a bit.

 

Cheddar Stuffed Mini Meatloaf

For meatloaf:
1/2 lb. ground turkey
1/2 lb. ground beef
2 tbs. Worcestireshire sauce
1 tbs. Zatarain's or other Cajun seasoning
1 tsp. garlic powder
1 tsp. chili powder
1 egg
1/2 cup Italian breadcrumbs
1 tbs. milk
1/2 block cheddar cheese, sliced thinly into 6 pieces

For sauce:
1/4 cup honey barbecue sauce
2 tbs. ketchup
1 tbs. brown sugar

Combine all ingredients except cheese.  Mix just until combined. Form into 6 patties.  Place 1 slice of cheese on each patty; form mini meatloaf around cheese.  Place mini meatloaves into a greased 9 x 13 pan. 

In a small bowl, combine barbecue sauce, ketchup, and brown sugar.  Brush onto tops of meatloaves.

Bake at 400 for 25-30 minutes, or until cooked through.
