Crock Pot Shredded BBQ Pork



Crock Pot Shredded BBQ Pork

3lb pork roast
1 tsp Cajun seasoning
1 tsp chili powder
2 cloves garlic, minced
1 cup ketchup
1/2 cup BBQ sauce
2 tbs brown sugar
2 tbs honey
1 tsp Worcestershire sauce
1 tsp mustard
1/2 cup water

Season pork roast with Cajun seasoning and chili powder.  Rub garlic into roast.  In a bowl, combine ketchup, BBQ sauce, brown sugar, honey, Worcestershire sauce, mustard, and water.  Place roast in crock pot.  Cover completely with sauce, reserving 1/2 cup sauce in refrigerator.  Cook on high for 4 - 6 hours or low 6 - 8 hours. Drain fat, shred, add reserved sauce, and serve on buns.

Baked Pork Tenderloin with Gravy



Baked Pork Tenderloin with Gravy - adapted from food.com

2 - 2.5 lbs pork tenderloin
1/4 tsp salt
1 tsp ground black pepper
3/4 cup flour
2 tbs olive oil
1/3 package onion soup mix
1 can cream of chicken soup
2 cups hot water

Preheat oven to 375 degrees.  Season pork tenderloin with salt and pepper.  Coat tenderloin well with flour.  Heat oil in an oven proof pot over medium high heat.  Brown tenderloin on all sides for 5 minutes.

Mix onion soup, cream of chicken soup, and hot water.  Turn heat down to medium low and add to pot.  Cover and bake for 1 hour.  Serve over mashed potatoes or cooked rice.

Crock Pot Sweet and Sour Pork Chops



Crock Pot Sweet and Sour Pork Chops

4 bone-in pork chops
5 oz. pineapple juice
1 tsp vinegar
3 tbs brown sugar
1/2 cup ketchup

Place pork chops in crock pot.  Combine pineapple juice, vinegar, brown sugar, and ketchup.  Pour over top of pork chops.  Cook on high 4 - 5 hours or low 6 hours.

Crock Pot Pork Stroganoff


4 boneless pork chops
1/2 tsp Cajun seasoning
1 can cream of mushroom soup
1/2 cup sour cream
8 oz. whole wheat pasta

Season pork chops with Cajun seasoning.  Add to crock pot.  Top with cream of mushroom soup.  Cook for 4 - 6 hours on high or 6 - 7 hours on low.  30 minutes before serving, add sour cream to crock pot.  Cook pasta according to package directions.  Remove pork chops and cut into bite size pieces.  Add pasta and pork chops to crock pot and stir.  Serve immediately.

Sweet and Spicy Pork Chops



Sweet and Spicy Pork Chops

6 thinly sliced pork chops
2 tbs olive oil
1 clove minced garlic
2 tbs brown sugar
1 tsp Cajun seasoning

1 - 2 tbs additional olive oil

Place first 5 ingredients ziploc bag.  Shake to mix thoroughly.  Marinade in the refrigerator for up to 3 hours.  

Remove from refrigerator.  Heat 1 - 2 tbs olive oil a large skillet.  Place chops and marinade in skillet.  Cook chops 3 at a time for  3 - 5 minutes on each side, until cooked through.  Repeat with remaining chops.

Pork Picatta



Pork Picatta - adapted from yumsugar

6 oz. bowtie pasta
1/4 cup margarine
1 tbs chopped parsley
3/4 cup grated Parmesan cheese
1 tbs olive oil
4 pork cutlets
salt and pepper to taste
1 cup chicken broth
1 tsp lemon juice
1/4 cup water
3 tbs cornstarch

Cook pasta according to package directions.  Toss with margarine, parsley, and Parmesan cheese.  Add black pepper to taste.

Meanwhile, heat olive oil in a pan.  Season pork cutlets with salt and pepper.  Brown on each side, about 5 minutes per side.  Remove from pan and set aside.  Add chicken broth; cook over medium heat about 5 minutes.  In a small bowl, combine water and cornstarch. Stir into chicken broth to thicken.  Stir in lemon juice.  

Serve pork cutlet on top of pasta.  Top with sauce.

Drunken Pork Chops

6 pork chops
2 tbs olive oil
8 oz. beer
1/3 cup ketchup
1/2 cup brown sugar
2 tbs Worcestershire sauce
Cajun seasoning

Season chops with Cajun seasoning.  Brown chops in olive oil over medium high heat.  Meanwhile, mix beer, ketchup, brown sugar, and Worcestershire sauce in a bowl.  After chops are browned, add sauce.  Reduce heat and simmer for 45 minutes.

Brown Sugar Glazed Pork Loin
 
1 pork tenderloin
1/2 tsp black pepper
1 tsp cumin
1 tsp chili powder
1/2 tsp Cajun seasoning
2 -3 tbs olive oil
1/2 cup brown sugar
2 tablespoons finely chopped garlic 
1 tsp water

Preheat oven to 350 degrees.  Combine pepper, cumin and chili powder in a small bowl.  Rub spices generously over the pork loin.  Heat olive oil over medium high heat in a large oven proof pot.  Brown pork loin on all sides.   

In another small bowl, combine brown sugar, garlic, and water.  Brush on all sides of tenderloin.
Roast in oven for 20 - 22 minutes.  Remove and slice.

Smothered Pork Chops



Smothered Pork Chops - Tyler Florence

1 cup all-purpose flour
2 tablespoons onion powder
2 tablespoons garlic powder
1 teaspoon cayenne
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 pork chops, 3/4-inch thick, bone-in
1/4 cup olive oil
1 cup chicken broth
1/2 cup buttermilk
chopped fresh flat-leaf parsley, for garnish



Put the flour in a shallow platter and add the onion powder, garlic powder, cayenne, salt, and pepper; mix with a fork to distribute evenly. Pat the pork chops dry with paper towels to remove any moisture and then dredge them in the seasoned flour; shaking off the excess.

Heat a large saute pan or cast iron skillet over medium heat and coat with the oil. When the oil is nice and hot, lay the pork chops in the pan in a single layer and fry for 3 minutes on each side until golden brown.

Remove the pork chops from the pan and add a little sprinkle of seasoned flour to the pan drippings. Mix the flour into the fat to dissolve and then pour in the chicken broth in. Let the liquid cook down for 5 minutes to reduce and thicken slightly.

Stir in the buttermilk to make a creamy gravy and return the pork chops to the pan, covering them with the sauce. Simmer for 5 minutes until the pork is cooked through. Season with salt and pepper and garnish with chopped parsley before serving.

BBQ Pulled Pork Pizza



BBQ Pulled Pork Pizza

Pork Roast
2 - 3 lb pork roast
1/2 tbsp Cajun seasoning
1/2 tbs chili powder
1/2 tsp paprika
2 tbs olive oil

Heat olive oil in an oven proof pot.  Season pork roast with Cajun seasoning, chili powder, and paprika.  Brown roast for 5 minutes on each side.  Cover and roast in oven for 2 1/2 hours at 300 degrees.

BBQ Sauce
3/4 cup ketchup
2 tbs brown sugar
1 tbs garlic, minced
1/2 tsp chili powder
1/4 tsp Cajun seasoning
1/4 tsp ground mustard
2 tbs honey

Meanwhile, combine all ingredients in a pot and simmer for 5 minutes.  Allow pork to cool; shred with two forks or your hands.  Toss with bbq sauce to combine.


After allowing pizza dough to rest, roll out on a pan lightly coated with olive oil.  Top with shredded pork and mozzarella cheese.  Bake at 500 degrees for 10 - 14 minutes.

Balsamic Glazed Pork Tenderloin

2 lbs pork tenderloin
2 tbs balsamic vinegar
2 tbs extra virgin olive oil
2 cloves garlic, minced
salt and pepper to taste
1/2 tsp rosemary, finely chopped
1/2 tsp thyme

Preheat oven to 500 degrees.  Cut slits in tenderloin and insert garlic.  Combine balsamic vinegar and olive oil and rub into meat.  Place in a greased baking dish. 

Combine, salt, pepper, rosemary, and thyme and rub into pork.  Roast in oven for 20 minutes, or until cooked through.  Remove from oven and let rest for 10 minutes covered with foil before slicing.

Honey Butter Pork Tenderloin

4 tbs butter
2 tbs honey
1 1/2 pounds pork tenderloin, trimmed
1/2 tsp Cajun seasoning
1/2 tsp black pepper
3/4 cup water

Preheat oven to 375 degrees. In an ovenproof pot, heat butter and honey over medium heat until melted.  Sprinkle pork tenderloin with Cajun seasoning and black pepper.  Brown each side for 5 minutes in the honey butter.  Lower heat if honey begins to burn.

Place pot in oven and roast uncovered for 15 - 20 minutes*.  Remove pot from oven and transfer the pork to a plate. Cover with foil.  Add water to the pot and stir over medium heat.  Simmer for about 5 minutes, until sauce is reduced slightly.  Slice pork on the diagonal and drizzle sauce over top to serve.

*NOTE:  May need to cook longer depending on the size and thickness of the pork tenderloin.

Sweet and Sour Pork Fried Rice



There is nothing remotely authentic about this fried rice, but we love it!

Sweet and Sour Pork Fried Rice

4 boneless pork chops, thinly cut
2 tsp olive oil
1/2 cup ketchup
2 tbs soy sauce
1 tsp honey
1 tbs brown sugar
1 tsp vinegar

1 1/2 cups brown rice, cooked and refrigerated
sesame oil
3/4 cup carrots, diced
1 egg
soy sauce

Brown pork chops in olive oil over medium heat for 4 -5 minutes per side.  In a small bowl, combine ketchup, soy sauce, honey, brown sugar, and vinegar.  Brush both sides of each pork chop; cook for 5 - 8 minutes longer, flipping once. Remove from pan and dice.

Whisk egg with 1/2 tsp soy sauce.   Cook in a skillet or wok over medium heat until set.  Flip and cook for 2 minutes. Remove from pan and chop.  Add a few tablespoons of sesame oil to pan.  Saute carrots for 4 - 5 minutes.  

Add rice to pan.  Fry over medium heat for 4 - 5 minutes.  Stir in soy sauce to taste (about 1/3 cup).  Add pork chops to rice.

BBQ Baby Back Pork Ribs



BBQ Baby Back Pork Ribs - adapted from Taste of Home 2004 Annual Recipes

4 lbs pork baby back ribs, cut in half
2 tbs margarine
2 tbs olive oil
1 cup water
1 cup ketchup
3 tbs Worcestershire sauce
2 tbs brown sugar
2 tbs vinegar
1 tbs lemon juice
1 tbs spicy mustard
1/4 tsp cayenne pepper

In a large skillet, brown ribs in batches in oil and margarine.  Place ribs, bone side down,  on a rack in a shallow roasting pan.  Cover and bake at 300 degrees for 1 1/2 hours. 

Meanwhile, in a skillet, add remaining ingredients.  Bring to a boil; reduce heat.  Simmer uncovered for 10 -13 minutes, or until slightly thickened.  

Drain ribs; brush with some of the sauce.  Bake uncovered, 1 hour longer or until meat is tender, brushing frequently with remaining sauce.

4 1" thick boneless pork chops
salt and pepper to taste
3 tbs olive oil
1/4 cup honey
2 tbs lemon juice
1 tbs minced garlic
2 tsp soy sauce

Preheat oven to 350 degrees.  Season chops with salt and pepper to taste. Brown pork chops over medium high heat for 3 - 4 minutes per side.  Place in a baking pan sprayed with nonstick spray.
In a bowl, combine remaining ingredients.  Brush on each side of pork chops. Pour remaining sauce over pork chops.  Cover with foil and bake for 30 - 45 minutes.  Spoon sauce over pork chops to serve.

Tasso Stuffed Pork Chops



Tasso Stuffed Pork Chops

4 thinly sliced pork chops
Cajun seasoning
chili powder
2 oz. turkey tasso, finely chopped
2 tbs olive oil
1 tbs minced garlic
1/2 cup bread crumbs
1 tbs margarine
1/2 tsp Cajun seasoning
 4 tbs margarine

Preheat oven to 375 degrees. Line a baking dish with foil and spray with cooking spray.  Sprinkle each side of pork chops with Cajun seasoning and chili powder, according to the amount of spice you prefer. 

In a saucepan, cook garlic in olive oil for 2 minutes.  Add tasso and cook for 5 minutes, or until browned.  Add breadcrumbs and margarine, stirring to create a wet breadcrumb mixture.  

Place 2 tbs of the breadcrumb mixture onto the middle of each pork chop. Roll up and secure with a toothpick.  Place pork chops in a baking dish.  Place 1 tbs of margarine on top of each pork chop roll.  Cover with foil.  Bake for 25 - 30 minutes, or until cooked through.

Brown Sugar Glazed Pork Roast



Brown Sugar Glazed Pork Roast

2 lb pork roast
2 tbs brown sugar
1 tsp Cajun seasoning
margarine
olive oil


Rub pork roast liberally with brown sugar and Cajun seasoning. Preheat oven to 300 degrees. In an oven proof pot, brown roast in margarine and olive oil on all sides.  

Roast in oven for 1 hour.  Remove and let stand for 10 minutes before slicing. Thicken gravy with cornstarch/water mixture. Just before slicing, pour gravy over roast.

Smothered Pork Chops



Smothered Pork Chops

4 - 6 thinly sliced boneless pork chops
2 tbs olive oil
1 tsp chili powder
1 tsp paprika
1 tsp Cajun seasoning
2 tbs sugar, divided
water

Heat olive oil in a large magna-lite pot over medium high heat.  Season pork chops with chili powder, paprika, and Cajun seasoning.  Brown pork chops on each side for 4 minutes.  Sprinkle each pork chop with sugar.  Cook for 3 minutes; flip and sprinkle other side with remaining sugar.  Cook for 3 minutes.  

Add water slowly, stirring in browned bits from bottom to make a gravy.  Use enough water to almost cover pork chops.  Reduce heat to medium low; cover and cook for 45 minutes, stirring occasionally.  Water will cook down to form a thick gravy.

Bacon Stuffed Pork Chops



Bacon Stuffed Pork Chops

For stuffing:
2 tbs butter or margarine
3/4 cup breadcrumbs
2 pieces turkey bacon,  cooked and crumbled
1 tbs minced garlic
1 tsp Cajun seasoning

For pork chops:
4 boneless pork chops, thinly sliced
1 tsp Cajun seasoning
1 tsp chili powder

Preheat oven to 350 degrees.  In a small pan, combine stuffing ingredients.  Cook for a few minutes, until garlic is soft and breadcrumbs are moistened.  

Sprinkle both sides of each pork chop with Cajun seasoning and chili powder.  Place 2 tbs of breadcrumb mixture in the center of each pork chops.  Roll up and secure with a toothpick.  Place in a baking pan sprayed with cooking spray.  Spray each pork chop roll with cooking spray.  Cover with foil and bake for 45 minutes.

Sweet Grilled Pork Chops



Sweet Grilled Pork Chops
4 thinly sliced boneless pork chops
1/4 cup olive oil
2 tbs honey
2 tbs soy sauce
1 tbs Cajun seasoning
1/4 cup bbq sauce

Combine pork chops with olive oil, honey, and soy sauce in a plastic bag.  Marinate for at least 2 hours.  Remove pork chops from bag and discard marinade.  Season with Cajun seasoning.  

Grill pork chops over medium heat until cooked through, 15 to 20 minutes, flipping every 3 to 4 minutes.  A few minutes before removing pork chops, coat each side with bbq sauce.
