Bacon Cheese Pinwheels





Bacon Cheese Pinwheels - Buns in My Oven


1 tube of crescent roll dough 
2 ounces light cream cheese 
6 turkey bacon slices, fried and chopped
1/2 cup mozzarella cheese
sprinkling of garlic salt

Unroll the crescent roll dough and smoosh together all the seams. Roll it out with the rolling pin to flatten it a bit. Spread with 2 ounces of softened cream cheese, right out to the very edges. Sprinkle with garlic salt. Sprinkle on the cheese and bacon  as evenly as possible. Roll it up from long end to long end. Slice into 1/2 to 1 inch (ish) slices and place on a baking sheet. Bake as directed on the crescent roll package.

Bacon Deviled Eggs



Bacon Deviled Eggs

10 hard boiled eggs
1/4 cup mayo
1 tsp mustard
2 tsp spicy brown mustard
1/8 tsp Cajun seasoning
2 slices turkey bacon, cooked and crumbled

Peel eggs.  Slice in half lengthwise.  Remove yolk and set aside in a bowl.  Add mayonnaise, mustard, spicy brown mustard, and Cajun seasoning. Mix together well.  Add bacon, reserving 1 tablespoon.  Fill each egg half with mixture.  Sprinkle with remaining bacon and additional Cajun seasoning if desired.

Breakfast Sandwich Thins



Breakfast Sandwich Thins

4 whole wheat sandwich thins
4 eggs
4 slices turkey bacon, cooked
4 slices Swiss cheese

Spray a skillet with cooking spray.  Heat skillet on medium heat; fry egg until the bottom is cooked, about 3 - 4 minutes.  Flip.  Cook for 2 - 3 minutes.  Repeat with remaining eggs.

To assemble sandwiches:
Open sandwich thin; place one fried egg, one slice of turkey bacon broken in half, and one slice of Swiss cheese on bottom of sandwich thin.  Top with remaining sandwich thin.  Repeat with remaining ingredients.  These freeze well - just wrap in foil or plastic wrap and place in a freezer bag.  Easy to grab, defrost, and go!

Bacon and Cheese Hashbrowns



Bacon and Cheese Hashbrowns

3 russet potatoes, peeled
3 tbs vegetable oil
1/4 tsp salt
1/2 tsp pepper
1/4 cup water
1 tbs margarine
1/4 cup mozzarella cheese
4 slices turkey bacon, cooked and crumbled

Preheat oven to 375 degrees.  Dice peeled potatoes into 1/2" cubes.  In a large pan, heat vegetable oil over medium high heat.  Brown potatoes for 5 minutes, stirring to prevent sticking.  Season with salt and pepper.  Turn heat down to medium low.  Pour water into pan and cover for 5 minutes, stirring every few minutes.  

Spray a baking sheet well with cooking spray.  Spread potatoes onto baking sheet in one layer.  Bake for 15 minutes.  Top with cheese and bacon and return to oven until cheese is melted.

Bacon, Egg, and Cheese Breakfast Casserole



Bacon, Egg, and Cheese Breakfast Casserole

1 package refrigerated crescent rolls
6 slices bacon, cooked and crumbled
6 eggs, beaten
3 tbs milk
1/4 tsp salt
1/2 tsp pepper
1 cup shredded cheddar cheese

Grease a 9" x 11" baking dish.  Unroll the crescent roll dough in the bottom of the baking dish and press seams together to form a crust. Sprinkle with crumbled bacon.  In a bowl, mix eggs, milk, salt and pepper . Pour over crescent roll dough.  Sprinkle evenly with cheese.  At this point, you could cover and place in the refrigerator overnight if necessary.

Bake at 400 degrees for 20 - 25 minutes, or until eggs are set and toothpick inserted in the center comes out clean.

Breakfast Crescents



Breakfast Crescents

1 package crescent rolls
3 eggs
2 tbs milk
1 tbs margarine
1/3 cup shredded cheddar cheese
3 slices turkey bacon, cooked and crumbled

Preheat oven according to package directions.  Combine eggs and milk in a bowl.  Whisk well.  Melt margarine over medium heat. Scramble eggs until cooked through.  Add in cheese and crumbled bacon.

Unroll and separate crescent rolls onto an ungreased cookie sheet.  Place 2 - 3 tablespoons of egg mixture onto each crescent roll. Roll each crescent.  Bake according to package directions.

Bacon, Egg and Cheese Breakfast Bagels



Bacon, Egg and Cheese Breakfast Bagels

12 slices turkey bacon, cooked
6 eggs, scrambled
6 slices Swiss cheese
12 whole wheat mini bagels

Separate each bagel.  Assemble half a slice of cheese, 2 tbs eggs, and 1 slice of bacon broken in half.  Top with bagel top.  These freeze well - just defrost in the microwave.

Flank Steak with Bacon Sauce



Flank Steak with Bacon Sauce - adapted from Food Network

1 flank steak, about 1 1/4 lbs
3 tbs olive oil
pepper
Cajun seasoning
garlic powder
4 slices turkey bacon, diced 
1 cup reduced sodium beef broth
2 tbs Worcestershire sauce
2 tbs cornstarch
3 tbs water

In a large pan, heat olive oil over medium high heat.  Sprinkle pepper, Cajun seasoning, and garlic powder liberally over both sides of flank steak.  Cook for 6 - 8 minutes per side.  Remove and let sit for 10 minutes before slicing.

Meanwhile, cook diced bacon over medium heat until crispy.  Add beef broth and heat until boiling.  Reduce to medium low. In a small bowl, combine cornstarch and water.  Whisk slowly into beef broth mixture. Cook for 5 minutes, stirring frequently.  Serve sauce over flank steak.

Bacon-wrapped Chicken



Bacon-wrapped Chicken

8 boneless skinless chicken tenders
1 tbs Cajun seasoning
4 oz. cream cheese, divided
8 slices bacon, partially cooked
1 tbs brown sugar

Preheat oven to 375 degrees.  Line a 9" x 13" baking pan with foil. Spray foil with cooking spray.  Sprinkle each chicken tender with Cajun seasoning. Divide cream cheese equally among chicken tenders and place on top.  Wrap a slice of turkey bacon around each chicken tender, covering the cream cheese.  Sprinkle a bit of brown sugar onto each slice of bacon.  

Bake for 15 - 20 minutes, or until chicken is cooked through and juices run clear.  Broil for 1 - 2 minutes to crisp bacon.

Bacon and Cheddar Breakfast Muffins



Bacon and Cheddar Breakfast Muffins - adapted from delish

2 cups whole wheat flour
1 cup all-purpose flour
1 tbs baking powder
1/2 tsp baking soda
1/2 tsp black pepper
1/4 tsp salt
2 eggs
1 1/3 cups buttermilk
3 tbs extra virgin olive oil
2 tbs margarine, melted
3/4 cup turkey bacon, cooked and crumbled
1 cup shredded cheddar cheese

Preheat oven to 400 degrees.  Coat 12 muffin cups with cooking spray.  Combine first 6 ingredients in a large bowl; mix well.

In a medium bowl, whisk eggs, buttermilk, olive oil and margarine until well blended.  Fold in bacon and cheese.

Make a well in the center of the dry ingredients and add the wet ingredients.  Mix well.  Scoop the batter into the prepared muffin pan.  Bake at 400 degrees for 20 - 22 minutes, until muffins are golden brown.  Let muffins cool in the pan for 5 minutes.  Loosen with a knife and place muffins on a wire rack to cool further.

Bacon Stuffed Pork Chops



Bacon Stuffed Pork Chops

For stuffing:
2 tbs butter or margarine
3/4 cup breadcrumbs
2 pieces turkey bacon,  cooked and crumbled
1 tbs minced garlic
1 tsp Cajun seasoning

For pork chops:
4 boneless pork chops, thinly sliced
1 tsp Cajun seasoning
1 tsp chili powder

Preheat oven to 350 degrees.  In a small pan, combine stuffing ingredients.  Cook for a few minutes, until garlic is soft and breadcrumbs are moistened.  

Sprinkle both sides of each pork chop with Cajun seasoning and chili powder.  Place 2 tbs of breadcrumb mixture in the center of each pork chops.  Roll up and secure with a toothpick.  Place in a baking pan sprayed with cooking spray.  Spray each pork chop roll with cooking spray.  Cover with foil and bake for 45 minutes.

Chicken and Bacon Crescent Braid



Chicken and Bacon Crescent Braid
1 can Pillsbury crescent dough or crescent rolls
2 large boneless skinless chicken breasts, cooked and shredded
4 slices turkey bacon, cooked and crumbled
4 oz cream cheese
1 cup shredded Parmesan cheese
1 egg white

Preheat oven to 375 degrees.  Spray a baking pan with cooking spray.  Unroll dough and press seams together if using crescent rolls. Mix shredded chicken with cream cheese. Place chicken mixture along middle 1/3 of dough, lengthwise.  Sprinkle crumbled turkey bacon over chicken, followed by the cheese.  

Cut slits on each side of the mixture, leaving 1/2" on either side.  Fold slits over, braid style, along the length of the dough.  Brush with egg white.  Bake for 15 - 20 minutes, or until golden brown.

Breakfast Burritos

I'm always in a rush in the morning, but breakfast is a necessity so I like to prepare things ahead of time that I can just heat in the microwave and eat quickly.  This recipe doesn't take much prep time and is relatively healthy, not to mention good! You could make it even healthier by using low-fat cheese and egg substitute.



Breakfast Burritos

8 eggs, scrambled
8 whole wheat tortillas
8 slices turkey bacon, cooked and crumbled
1 cup shredded cheese, your choice

Lay out a tortilla. Fill with 1/8 of the scrambled eggs, 1 slice of crumbled turkey bacon, and a sprinkle of cheese. Wrap up burrito style.  These can be wrapped in foil, frozen in a freezer bag, and reheated for breakfast on the go.

Bacon Chicken Drumettes


Bacon Chicken Drumettes

1 tbs olive oil
3/4 cup flour
Cajun seasoning
1 tbs chili powder
1 lb. chicken drumettes
 3 slices turkey bacon, diced
1 tbs olive oil
1 tbs minced garlic
1 can diced tomatoes
1 tsp sugar
1/2 can chicken broth


Heat 1 tbs olive oil in medium skillet.  In a medium size bowl, combine flour and seasoning.  Dip each chicken drumette into flour mixture, coating well.  Cook drumettes in oil until well-browned, about 10-12 minutes.  Remove from pan.  Cook turkey bacon until crisp.  Remove from pan. 

Heat 1 tbs olive oil in pan. Cook garlic for 2 minutes.  Add diced tomatoes, sugar, cooked bacon(reserving some for garnish), and chicken broth.  Cover and cook for 10 minutes.  Add drumettes, cover and cook for 15 minutes.  Garnish with reserved bacon and serve.

Bacon-wrapped Stuffed Hot Dogs

This is another easy recipe that I was able to prepare in a few minutes and then hand off to my husband to throw onto the grill.  It's a nice change of pace from the usual grilled hot dog. Also, I am obsessed with turkey bacon, so of course I loved this.



Bacon-wrapped Stuffed Hot Dogs

5 turkey hot dogs
5 slices turkey bacon
3 tbs ketchup
1/2 tbs mustard
1 tbs brown sugar
1 slice Swiss cheese, sliced into 5 pieces
brown sugar

Mix ketchup, mustard, and brown sugar. Make a slit down the center of each hot dog, being careful not to cut all the way through.  Brush ketchup mixture in the center of each hot dog.  Place one slice of cheese in each hot dog slit.  Wrap with bacon, tucking ends under.  Sprinkle bacon with brown sugar.  Grill on low heat until cheese is melted and bacon is cooked through, approximately 15-20 minutes.

Bacon Cheddar Potato Slabs
















Bacon Cheddar Potato Slabs

4 russet potatoes
salt and pepper to taste
1/2 cup shredded cheddar cheese
3 slices turkey bacon, cooked and shredded

Preheat oven to 375 degrees. Slice potatoes in half and place skin side up on a buttered baking sheet. Bake for 40 minutes. Remove from oven, flip skin side down, and sprinkle with cheese. Return to oven for 10 minutes or until tender. Sprinkle with bacon, salt, and pepper before serving.
