Whole Wheat Hamburger Buns





Whole Wheat Hamburger Buns - adapted from food.com



  • 1 1/4 cups milk, slightly warmed1 beaten eggs2 tablespoons butter, melted1/4 cup white sugar3/4 teaspoon salt3/4 cups bread flour2 cups whole wheat flour1 1/4 teaspoons active dry yeast


  • Place all ingredients in pan of bread machine according to manufacturer's directions.  Select dough setting.  When cycle is complete, turn out onto floured surface.  Cut dough in half and roll each half out to a 1" thick circle.  Cut each half into six 3 1/2" rounds with inverted glass as a cutter.  Place on greased baking sheet far apart.  Cover and let rise until doubled, about one hour.  Bake at 350° for 9 - 12 minutes.  Brush with 1 tbs melted butter.

Buttery Garlic Pasta

13 oz whole wheat rotini 
3 Tbsp olive oil
3 Tbsp butter
2 cloves garlic, minced
1/4 tsp parsley
Salt and pepper to taste
1/4 cup grated Parmesan cheese


Bring 6 quarts of water to a boil. Cook pasta until al dente.  Drain and set aside.
Meanwhile, peel and mince the garlic.  Melt the olive oil and butter over medium heat.  Add garlic to the butter and olive oil. Cook, stirring constantly, until the garlic just begins to brown.  Add salt, pepper, and parsley, and stir to combine.
Add the pasta to the skillet, toss to coat all noodles evenly.  Sprinkle with Parmesan cheese.  Serve.

Whole Wheat Pita Chips



Whole Wheat Pita Chips

3 whole wheat pitas
1 tbs olive oil
1/2 tsp sea salt

Preheat oven to 350 degrees.  Slice pitas into wedges.  Toss with olive oil.  Place on greased baking sheet. Sprinkle with sea salt.  Bake for 7 - 9 minutes.  Serve with hummus or other dip.

Garlic Alfredo Sauce



Garlic Alfredo Sauce

2 tbs butter
1 clove garlic, minced
3 tbs light cream cheese
2 cups fat free half and half
fresh black pepper
2/3 cup grated Parmesan cheese

Melt butter in a pot over medium heat.  Add garlic and cook for 2 minutes.  Add cream cheese, whisking until melted.  Slowly whisk in half and half.  Bring to a boil, then reduce heat to medium low.  Cook for 10 minutes, stirring frequently.  Remove from heat and stir in cheese and black pepper.  Serve over pasta.

Banana Nut Muffins



Banana Nut Muffins

1 1/2 cups whole wheat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 egg, slightly beaten
1 large mashed banana
1/2 cup sugar
1/4 cup brown sugar
3 tbs vegetable oil
1/2 cup chopped pecans

Preheat oven to 350 degrees.  Spray muffin tins with cooking spray.  Combine flour, baking powder, baking soda, and salt in a bowl. 

In another bowl, combine egg, banana, sugar, and oil.  Add to flour mixture, stirring just until combined. Fold in pecans.  

Fill muffin tins 2/3 full.  Bake for 20 - 25 minutes, or until muffins are golden brown.

3 eggs
1 1/2 cup buttermilk
1/2 cup vegetable oil
1 3/4 cup whole wheat flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Combine all ingredients and cook according to waffle iron directions.

Whole Wheat Chocolate Chip Pancakes



Whole Wheat Chocolate Chip Pancakes

1 1/4 cups whole wheat flour
1 tbs sugar
1 tbs baking powder
1/4 tsp salt
2 eggs
1 cup milk
4 tbs melted margarine
3/4 tsp vanilla
1 cup semi-sweet chocolate chips

Heat skillet or griddle to medium heat.  Combine flour, sugar, baking powder and salt in a large bowl.  Mix together wet ingredients and beat into dry mixture until smooth.  Fold in chocolate chips. 

Pour 1/4 cup batter into skillet.  Cook until pancake begins to bubble.  Flip and cook for about one minute on other side. Repeat with remaining batter.  Top with butter, syrup, or whipped cream.

Old-Fashioned Pancakes

1 1/2 cups whole wheat flour
3 1/2 tsp baking powder
1 tsp salt
1 tbs white sugar
1 1/4 cups milk
1 egg
3 tbs melted margarine

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth. 

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Whole Wheat Banana Bread

3/4 cup margarine
3/4 cup sugar
2 bananas, ripened
2 eggs
1 tsp vanilla
1 tsp baking soda
2 cups whole wheat flour
1/2 tsp salt
1/2 cup buttermilk
3/4 cup chopped pecans

Preheat oven to 350 degrees.  Cream margarine and sugar. Mash bananas and stir into creamed mixture.  Stir in eggs, vanilla, baking soda, flour, and salt.  Gently stir in buttermilk and pecans. Pour into a greased loaf pan.  Bake for 1 hour, or until toothpick comes out clean.

Whole Wheat Oatmeal Pancakes

2 cups milk
1 1/2 cups oats
1 cup whole wheat flour
1/4 cup wheat germ
2 tbs brown sugar
1 tbs baking powder
1/2 tsp sea salt
2 eggs, beaten
1/4 cup vegetable oil

In bowl, pour milk over rolled oats; let stand for 5 minutes.   In another bowl, stir together flours, wheat germ, sugar, baking powder and salt.

Beat eggs and oil together; add to dry ingredients along with milk/oats mixture, stirring just until mixed (if batter is too thick, add a little more milk).

Heat a large greased skillet over medium to med-high heat.  Pour in about 1/4 cup batter for each pancake and cook for about 2 minutes or until bubbles on top break but do not fill in, and bottoms are golden and set.  Flip and cook until set.  Serve with butter and syrup.

Another Whole Wheat Pancake Recipe

1 tbs honey
3 tbs vegetable oil
2 large eggs
1 cup buttermilk
1 cup whole wheat flour
2 tsp baking powder
1/2 tsp kosher salt
margarine

Stir honey and oil together in a bowl.  Add milk and eggs and beat well. Mix dry ingredients into the liquid mixture and stir until moistened.  

Heat pan over medium heat.  Melt a few tablespoons of margarine.  Drop about 1/3 cup of batter for each pancake.  Cook until top begins to bubble; flip.  Add more margarine between each batch of pancakes.  Cook remaining batter.

Whole Wheat Pizza Dough


I've been using the same whole wheat bread machine pizza dough for quite a while, and even my husband was okay with eating it despite his love for all things made with white flour. I ran across this one and decided to try it, and I'm so glad that I did.  It makes a thinner crust, which I'm a fan of because I'd rather taste the toppings than the crust, and it's a lot quicker than using the bread machine for the dough.

Whole Wheat Pizza Dough

1 cup whole wheat flour
1 cup all-purpose flour
2 1/4 tsp yeast
1 tsp salt
1/2 tsp sugar
3/4 cup hot water
1 tbs olive oil

Combine flour, yeast, salt, and sugar in a food processor; pulse to mix.  In a measuring cup, combine hot water and olive oil.  Gradually add water mixture into food processor while pulsing dough mixture, until it forms a sticky ball.  Dough should be soft. Add more water if too dry or more flour if too sticky.  Process until dough forms a ball, about 1 minute.   

Transfer dough to a lightly floured surface.  Spray a piece of plastic wrap with cooking spray, then cover dough.  Allow to rest for 20 minutes before rolling out. Add toppings of your choice and bake at 500 degrees for 10 - 14 minutes.

Whole Wheat Belgian Waffles

1/4 cup sugar
3 tablespoons baking powder
3/4 teaspoon salt
2 cups milk
3 eggs
1/3 cup vegetable oil 
1/2 teaspoon vanilla extract 
Combine flour, sugar, baking powder, and salt.   Add milk, eggs, vegetable oil and vanilla extract.  Bake on waffle iron according to manufacturer's directions.

Whole Wheat Buttermilk Pancakes



Whole Wheat Buttermilk Pancakes - slightly adapted from Tasty Kitchen

1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1 tbs sugar
1/2 tsp salt
1 cup buttermilk
1 egg
2 tbs vegetable oil
margarine
Heat large pan on medium and melt 1 tablespoon margarine.  Sift the dry ingredients in a large bowl.   Add buttermilk, egg, and oil to dry ingredients. Whisk well until combined.  Pour 1/4 cup batter into hot pan for each pancake. Flip when the surface of the pancake becomes somewhat dry and starts to bubble.  Melt another tablespoon of margarine between each batch of pancakes.

Makes about 10 pancakes.

Healthier Pioneer Woman Cinnamon Rolls



Pioneer Woman's Cinnamon Rolls - healthier version

2 cups 1% milk
1/2 cup vegetable oil
1/2 cup sugar
1 package active dry yeast(2 1/4 tsp)
2 cups whole wheat flour plus 1/2 to 1 cup more
2 cups all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tbs salt
melted margarine
3/4 cup sugar
cinnamon

Icing
1/4 cup 1% milk
1 tsp vanilla extract
2 cups powdered sugar

Mix the milk, vegetable oil and sugar in a pan. “Scald” the mixture (heat until just before the boiling point). Turn off heat and leave to cool 45 minutes to 1 hour. When the mixture is lukewarm to warm, but NOT hot, sprinkle in yeast. Let this sit for a minute. Then add 2 cups of all-purpose flour and 2 cups of whole wheat flour. Stir mixture together. Cover and let rise for at least an hour. 

After rising for at least an hour, add 1/2 cup to 1 cup more cup of flour, the baking powder, baking soda and salt. Stir mixture together. (At this point, you could cover the dough and put it in the fridge until you need it – overnight or even a day or two, if necessary. Just keep your eye on it and if it starts to overflow out of the pan, just punch it down).

When ready to prepare rolls: Sprinkle rolling surface generously with flour. Take half the dough and form a rough rectangle. Then roll the dough thin, maintaining a general rectangular shape. Drizzle about 1/2 cup melted margarine over the dough. Now sprinkle sugar over the margarine followed by a generous sprinkling of cinnamon.

Now, starting at the opposite end, begin rolling the dough in a neat line toward you. Keep the roll relatively tight as you go. Next, pinch the seam of the roll to seal it.

Spread 1 tablespoon of melted margarine in a seven inch round foil cake or pie pan. Then begin cutting the rolls approximately ¾ to 1 inch thick and laying them in the buttered pans.

Repeat this process with the other half of the dough. Let the rolls rise for 20 to 30 minutes, then bake at 400 degrees until light golden brown, about 15 to 18 minutes.

Icing - Alton Brown

Combine milk and vanilla in a medium saucepan and heat over low heat until warm. Sift confectioners' sugar into milk mixture. Whisk slowly, until well combined. Remove the glaze from the heat and drizzle immediately over warm cinnamon rolls.

Whole Wheat Honey Rolls


Whole Wheat Honey Rolls - adapted from Taste of Home 2004 Annual Recipes

2 packages active dry yeast
2 cups warm buttermilk
1/2 cup margarine, melted
1/3 cup honey
2 tbs sugar
3 cups whole wheat flour
1 tsp salt
1 tsp baking soda
1 1/2  to 2 1/2 cups all-purpose flour
Additional melted margarine

Add ingredients to bread machine in order suggested by manufacturer.  Select dough setting.

When dough cycle is finished, punch dough down.  Turn onto a lightly floured surface.  Divide into seven portions.  Divide each portion into six pieces; shape each into a ball.  Place 2" apart on greased baking sheets.  Cover and let rise in a warm place until doubled, about 30 minutes.

Brush with melted margarine.  Bake at 400 degrees for 12 -16 minutes or until golden brown.  Remove to wire racks to cool.

Whole Wheat Banana Muffins

 
Whole Wheat Banana Muffins

1 3/4 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon wheat germ (optional)
1/3 cup olive oil or canola oil
1/2 cup honey
2 eggs
1 cup mashed ripe bananas
1/4 cup hot water  

Stir together dry ingredients.  Beat oil and honey together; add eggs and beat well. 
Add bananas and beat to combine.  Add dry ingredients to wet, alternating with hot water; mix well after each addition.  Spoon batter into 24 greased muffin cups; bake at 325 degrees for 15 minutes, or until muffins are golden brown and test done.  Remove from oven and cool on rack.

Whole Wheat Pizza Crust

1 1/3 cup water
2 tbs olive oil
3/4 tsp salt
2 cups all purpose flour
2 cups whole wheat flour
2 tsp yeast
1 tbs Italian seasoning
2 tbs grated Parmesan cheese

Add ingredients to bread machine in order recommended for your machine.  Start dough cycle. 

Once the dough cycle is complete, remove it from the pan and separate it into two equal pieces. Preheat oven to 450 degrees. Brush two pizza pans lightly with olive oil to prevent sticking.  Roll out dough into two pans.  Brush tops lightly with olive oil.  Add toppings.

Bake for 10 - 12 minutes, or until golden.




For this particular pizza, I topped it with shredded chicken mixed with bbq sauce and mozzarella cheese.  You can choose whatever toppings you like. We make two pizzas - we eat one, then slice up the other and freeze it for lunch at a later date.
