JoJo's Enchilada Casserole



JoJo's Enchilada Casserole

1 lb ground turkey
2 10 oz. cans enchilada sauce
1 can Wolfe turkey chili without beans
1 can fat free refried beans
2 cups shredded cheddar cheese
8 fajita size whole wheat tortillas

Preheat oven to 350 degrees.  Cook ground turkey until no longer pink; drain.  Add 1 can enchilada sauce, 1 can refried beans, and 1 cup shredded cheddar cheese.  In a separate pot, combine remaining can of enchilada sauce and 1 can Wolfe chili.  
Spray a 9" x 13" baking dish with cooking spray.  Fill tortillas with turkey mixture; roll up and place in pan.  If any meat mixture remains, pour over top of tortillas.  Top with chili mixture.  Sprinkle with remaining cheese. Bake for 15 - 20 minutes, until cheese is bubbly.


**Can be frozen before placing cheese on top and baking.  Defrost in the refrigerator overnight, top with cheese, and bake according to directions.**

Baked Taco Pasta




Baked Taco Pasta

8 oz. whole wheat pasta
1 lb ground turkey
1 14 oz can tomato sauce
1/2 cup water
1 package taco seasoning
1 1/2 cups shredded Mexican blend cheese

Cook pasta according to package directions.  Meanwhile, cook ground turkey until no longer pink.  Drain fat.  Stir in tomato sauce, water, and taco seasoning.   Simmer on medium heat for 15 minutes.  Add sauce to pasta, along with 1/2 cup of cheese.  Pour into a greased 9" baking dish. Top with remaining cheese. Bake at 350 degrees for 30 minutes.

Turkey Parmesan Burgers



Turkey Parmesan Burgers

1 lb ground turkey
3/4 cup Italian breadcrumbs
1 egg
1/2 tsp pepper
1/4 cup grated Parmesan cheese
4 slices mozzarella cheese
1 cup spaghetti sauce
4 whole wheat buns
Combine ground turkey, breadcrumbs, egg, pepper, and Parmesan cheese.  Form into 4 patties.  Cook over medium high heat for 5 - 6 minutes per side, until cooked through. 

Preheat oven to 350 degrees.  Separate buns and place bun bottoms on baking sheet.  Place one burger on each bun.  Spoon 1/4 cup spaghetti sauce over top of each burger. Top with a slice of cheese.  Bake until cheese melts.  Remove from oven and top with bun tops.

Drunken Meatballs



Drunken Meatballs

For meatballs:
1 lb ground turkey
3/4 cup breadcrumbs
1 tsp parsley
1/2 tsp Cajun seasoning
1/2 tsp black pepper

For sauce:
3/4 cup ketchup
1/4 cup brown sugar
8 oz. beer

Preheat oven to 375 degrees.  Combine ground turkey, breadcrumbs, parsley, Cajun seasoning, and black pepper in a bowl.   Form into golf ball size meatballs. Bake for 15 - 20 minutes, until cooked through.

Meanwhile, combine ketchup, brown sugar, and beer over medium high heat.  Simmer on medium low.  Add cooked meatballs to sauce; toss to coat.  Simmer for 30 minutes.

Cheeseburger Pizza



Cheeseburger Pizza

1 lb ground turkey
1 clove chopped garlic
1 cup pizza sauce
3/4 cup mozzarella cheese
8 oz. Velveeta, thinly sliced

Preheat oven to 500 degrees.  Brown ground turkey. Drain.  Add garlic and cook for 2 minutes.  Meanwhile, roll pizza dough into pizza pan.  Spread pizza sauce over crust; add meat on top of pizza sauce, spreading evenly.  Top with sliced Velveeta.  Sprinkle with mozzarella cheese.  Bake for 10 - 14 minutes, until cheese begins to bubble and brown.

Turkey Sloppy Joes



Turkey Sloppy Joes

1 lb ground turkey
3/4 cup ketchup
3 tbs brown sugar
1 tbs Worcestershire sauce
1/4 tsp prepared mustard
1/8 tsp red pepper flakes
1/4 tsp ground black pepper

Cook ground turkey over medium heat, until no longer pink.  Drain fat.  In a small bowl, combine remaining ingredients.  Pour over turkey and stir to combine.  Simmer on low for 30 minutes, stirring occasionally. Serve on whole wheat buns or sandwich thins.

Taco Crescent Casserole



Taco Crescent Casserole

1 can crescent rolls
1 lb ground turkey
1 14 oz. can tomato sauce
1/2 pkg taco seasoning
3/4 cup sour cream
3/4 cup shredded cheddar cheese

Preheat oven to 350 degrees.  Grease a 9" x 13" casserole dish.  Unroll crescent roll dough in dish and press seams together to seal.   Meanwhile, cook ground turkey in a pan, until no longer pink.  Add tomato sauce and taco seasoning; simmer for 5 - 10 minutes.  Pour turkey mixture over crescent roll dough.  Top with a layer of sour cream; sprinkle with cheese. Bake for 22 - 25 minutes.

Stuffed Shells



Stuffed Shells

1 12 oz. box jumbo shells
3 cups spaghetti sauce
1 lb ground turkey
1 24 oz. carton cottage cheese
1 egg
1 tsp parsley
1/2 tsp black pepper
2 cups shredded Parmesan cheese

Preheat oven to 350 degrees. Cook pasta according to package directions.  Drain and set aside. Meanwhile, cook ground turkey until no longer pink.  In a bowl, combine cottage cheese, egg, parsley, pepper, and 1 cup of Parmesan cheese.  Fold in cooked ground turkey.

Spread 3/4 cup spaghetti sauce evenly in a 9" x 13" baking dish.  Stuff each shell with cottage cheese mixture.  Top with remaining spaghetti sauce.  Sprinkle with remaining cheese.  Bake for 50 minutes, until cheese is bubbly.

Italian Sausage Pasta



Italian Sausage Pasta

1 lb Italian turkey sausage, crumbled
1 tsp garlic, minced
2 14 oz. cans tomato sauce
1 tbs brown sugar
1/2 tsp parsley
1/2 tsp basil
1/2 cup whipping cream
8 oz. pasta
Parmesan cheese

Brown sausage over medium heat until no longer pink, stirring frequently.  Add garlic and cook for 2 minutes.  Add tomato sauce, cream, brown sugar, parsley, and basil.  Simmer for 10 minutes.  

Meanwhile, cook pasta according to package directions.  Serve sauce over pasta. Top with Parmesan cheese.

Venison Turkey Chili



Venison Turkey Chili

1 lb ground turkey
1 lb ground deer meat
1 14.5 oz. can diced tomatoes
2 15 oz. cans tomato sauce
1/2 cup water
1 tbs chili powder
1 tbs Zatarain's seasoning (Cajun seasoning)
2 tbs Worcestershire sauce
1 tbs sugar
2 tbs brown sugar


Cook turkey and deer meat together over medium in a large pot until no longer pink.  Drain grease.  Add remaining ingredients, stirring well.  Bring to a boil;  turn heat to medium low.  Cook for 2 hours.  Serve with sour cream, shredded cheddar cheese, or with Fritos.

**Can be frozen flat in freezer bags after cooking.  Defrost in refrigerator over night and reheat on stove on medium low heat.**

Garlic Butter Turkey Burgers



Garlic Butter Turkey Burgers - adapted from Real Mom Kitchen

1 lb ground turkey
4 tbs butter, softened
1 clove garlic, minced
garlic salt and pepper to taste
hamburger buns

Finely mince garlic cloves and mix into softened butter. Place seasoned butter in medium glass bowl and put in freezer 20-30 minutes or until butter has hardened.

Break butter up using a fork  into little pea-size pieces and mix into ground beef.  Form into 4 patties and cover, returning to fridge for about 15 minutes.

Sprinkle with garlic salt and pepper and grill over medium heat.  Serve on hamburger buns with your favorite condiments.

Turkey Meatloaf



Turkey Meatloaf

1 lb ground turkey
1/2 cup Italian breadcrumbs
1/4 cup oatmeal
1 tsp chili powder
1 tsp Cajun seasoning
1 egg

Sauce
1/4 cup ketchup
3 tbs brown sugar
1/2 tsp Worcestershire sauce

Preheat oven to 350 degrees.  Combine first 6 ingredients. Form into a loaf in a baking pan. Combine sauce ingredients and brush over top of meatloaf.  Bake for 1 hour, or until internal temperature reaches 160 degrees F.

Lasagna



Lasagna

1 lb ground turkey
3 cups spaghetti sauce(preferably homemade)
1 cup Parmesan cheese
1 cup mozzarella cheese
1 egg
16 oz. cottage cheese
1 tsp black pepper
1 tsp parsley
9 lasagna noodles

Brown ground turkey.  Add spaghetti sauce and mix well.  In a separate bowl, mix cottage cheese, egg, Parmesan cheese, pepper, and parsley.

In a 9" x 9" pan, spread a layer of ground turkey mixture, about 3/4 cup.  Follow with a layer of noodles, then cottage cheese mixture.  Repeat layers. Top with remaining spaghetti sauce and mozzarella cheese.  

Bake covered with foil at 350 for 1 hour.  Remove and let stand 5 minutes before slicing.

Simple BBQ Turkey Meatballs



Simple BBQ Turkey Meatballs

1 lb ground turkey
3/4 cup breadcrumbs
1 egg
1 tsp Cajun seasoning
1/4 cup oats
1/2 tsp chili powder
1/2 bottle Kraft BBQ sauce
3 tbs brown sugar


Preheat oven to 400 degrees. Spray a 9" x 13" baking dish with cooking spray.  Combine all ingredients except BBQ sauce and brown sugar.  Form into approximately 24 meatballs and place in baking dish, leaving 1" between each meatball.

Bake for 15 - 20 minutes, or until meatballs are cooked through.  Meanwhile, combine BBQ sauce and brown sugar in a pot over low heat.  After meatballs have been removed from oven, add them to the sauce. Stir to coat.  Simmer on medium low for 5 minutes, stirring occasionally.

**Meatballs can be frozen after baking.  Defrost in refrigerator over night.  Add to sauce.**

Cheesy Salsa Meatloaf



Cheesy Salsa Meatloaf - adapted from Real Mom Kitchen

1 lb ground turkey
1/2 tsp Cajun seasoning
1 tsp chili powder
1/2 to 3/4 cup breadcrumbs
1 egg
1 cup salsa, divided
shredded cheddar cheese

Spray muffin tin with cooking spray. Preheat oven to 400 degrees.  Combine ground turkey, Cajun seasoning, chili powder, breadcrumbs, egg, and 1/4 cup salsa.  Divide evenly into 8 muffin cups.  Bake for 20 - 25 minutes, until cooked through.  Remove from oven and top with remaining salsa and cheese. Bake for an additional 3 minutes, or until cheese is melted.

Turkey Meatball Sub Sliders



Slider Buns - adapted from recipezaar.com

1 cup water
1 egg
1 1/2 cups all purpose flour
1 1/2 cups whole wheat flour
3/4 tsp salt
1/4 cup canola oil
1/4 cup sugar
3 tsp yeast
1 tbs vital wheat gluten

Place all ingredients in bread pan according to manufacturer's directions. Select dough setting.

When dough cycle has finished, remove bread pan, and turn out dough onto a floured countertop. Gently roll and shape the dough into an 18" rope. 

With a sharp knife, divide dough into 16 pieces.

Grease 2 baking sheets. Roll pieces of dough into small balls and flatten. Place on prepared baking sheet. Cover and let rise in warm oven 10 to 15 minutes until almost doubled. 

Preheat oven to 400°F.  Bake 10 to 12 minutes until golden brown.  When ready to use, split buns horizontally. These will keep in plastic bag in the freezer for 3 to 4 weeks.



Meatballs

1 lb ground turkey
1 tsp pepper
1 tbs Italian seasoning
1 egg
3/4 cup Italian breadcrumbs 

Combine all ingredients in a bowl. Mix well. Form into 1 1/2" meatballs.  Bake at 400 degrees for 15-18 minutes, or until cooked through.


Sauce

1 tbs olive oil
1 tbs minced garlic
1 12 oz. can tomato paste
1 14 oz. can tomato sauce
3/4 cup water
1 tsp Cajun seasoning
1 tsp chili powder
2 tbs sugar
2 tbs brown sugar

In a medium pot(preferably a Magna-lite) cook garlic in olive oil over medium heat for 2 minutes.  Add tomato paste and cook for 5 minutes, stirring frequently.  Stir in tomato sauce and water.  Add Cajun seasoning, chili powder, sugar, and brown sugar.  Simmer on low.

To assemble sliders:

Additional ingredient need:
mozzarella cheese

 Split each slider bun horizontally.  Add 3 meatballs to the bottom of each slider.  Top with a sprinkle of mozzarella cheese.  Place tops back on sliders. Bake for 5 - 8 minutes at 400 degrees until cheese is melted.

Skillet Chili Mac with Corn



Skillet Chili Mac with Corn - adapted from My Kitchen Cafe

1 lb ground turkey
3/4 tbs chili powder
1 tsp Cajun seasoning
1 tbs olive oil
3 tbs minced garlic
1 tbs brown sugar
2 8 oz. cans tomato sauce
8 oz. pasta, cooked
1 cup frozen corn
2 tbs fresh cilantro, chopped
1 cup shredded cheddar cheese

Cook ground turkey over medium heat until no longer pink.  Drain fat.  Add chili powder and Cajun seasoning; mix well.  Add 1 tbs olive oil to pan.  Cook garlic and brown sugar for 1 - 2 minutes.  

Add tomato sauce and cooked pasta.  Simmer on medium low for 5 - 10 minutes.  Add frozen corn, cilantro, and cheese.  Cook for 5 minutes longer, or until cheese is melted and corn is heated.

Tangy Bbq Turkey Meatballs



Tangy Bbq Turkey Meatballs

For meatballs:
1 lb ground turkey
1 1/2 cups breadcrumbs
1 tbs black pepper
1 tsp oregano
1 tsp basil
1 tbs minced garlic

Preheat oven to 400 degrees. Combine all ingredients and mix well. Form into golf ball size meatballs and place in a greased baking pan. Bake for 20 - 25 minutes, until browned and cooked through.


For sauce:
1 cup ketchup
1/2 cup bbq sauce
1 tsp mustard
1 tsp Worcestershire sauce
1 tbs brown sugar
1 tsp sugar

Mix all ingredients well in a small bowl. Place meatballs and sauce in a saucepan over medium low heat. Mix well and keep warm until ready to serve.

Creamy Taco Mac


 Creamy Taco Mac - slightly adapted from Annie's Eats

1 lbs. ground turkey
8 oz. dry rotini pasta
1 tbs garlic, minced
1 (14 oz.) can Rotel tomatoes, drained
1 tbs chili powder
1 tsp paprika
3 oz. cream cheese
1/3 cup sour cream
1/4 cup water
Shredded cheddar cheese


Bring a large pot of water to boil.  Cook pasta according to the package directions.  Set aside.

Meanwhile, in a large skillet or sauté pan, cook the ground turkey over medium-high heat until no longer pink. Once the turkey is cooked through, mix in the garlic and cook about 1 minute.  Mix in the Rotel, chili powder, and paprika, and let simmer over medium heat for about 5 minutes.  Stir in the cooked pasta, cream cheese, sour cream and water, stir until the cream cheese is melted and the sauce is well blended. Simmer over medium-low heat 3-5 minutes to reduce the sauce a bit.  Remove from the heat and top with shredded cheddar cheese, if desired.

Turkey Cutlets



Turkey Cutlets

1 lb ground turkey
1 egg
3/4 cup Italian breadcrumbs
1 tsp Cajun seasoining
1/4 cup oatmeal
1 cup Italian breadcrumbs

margarine
2 tbs olive oil

Mix first five ingredients well and form into 4 or 5 patties.  Place remaining breadcrumbs in a separate bowl.  Dip each patty in breadcrumbs, coating well.

Heat a large saucepan over medium heat.  Add a few tablespoons of margarine and the olive oil to the pan.  Brown the patties for approximately 4 minutes. Turn and brown the other side of each patty for 4 minutes.  Add more margarine as needed to keep patties from burning.  Turn one more time on each side, until patties are cooked through.
