Chocolate Cheesecake Cupcakes


Chocolate Cheesecake Cupcakes

For cake:
1 1/2 cups flour
1 cup sugar
1/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
1 cup water
1 tbs vinegar
1/3 cup vegetable oil
1 tsp vanilla

Sift together dry ingredients.  Add liquid ingredients.  Beat until well mixed.  Fill cupcake liners 1/3 full with chocolate batter.

Cheesecake:
1 8 oz. package cream cheese
1 egg
1/3 cup sugar
1/8 tsp salt

Mix all ingredients together; stir well.  Top each cupcake liner with a heaping teaspoon of the cream cheese mixture. Bake at 350 degrees for 30 - 35 minutes.  Top with chocolate icing if desired.

  6. I'd like to add these to my list of cookies for a wedding i'm doing...but use the mini muffin pans. Can you give me an idea how long to bake and what the yield might be? Thanks!!

    1. I've never made them as mini muffins, but I did a quick Google search and the recommended baking time for mini muffins is 10 - 15 minutes. I hope that helps!
