Chocolate Cheesecake Cupcakes
For cake:
1 1/2 cups flour
1 cup sugar
1/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
1 cup water
1 tbs vinegar
1/3 cup vegetable oil
1 tsp vanilla
Sift together dry ingredients. Add liquid ingredients. Beat until well mixed. Fill cupcake liners 1/3 full with chocolate batter.
Cheesecake:
1 8 oz. package cream cheese
1 egg
1/3 cup sugar
1/8 tsp salt
Mix all ingredients together; stir well. Top each cupcake liner with a heaping teaspoon of the cream cheese mixture. Bake at 350 degrees for 30 - 35 minutes. Top with chocolate icing if desired.

ReplyDeleteI've never made them as mini muffins, but I did a quick Google search and the recommended baking time for mini muffins is 10 - 15 minutes. I hope that helps!
