Breakfast Sandwich Thins

Breakfast Sandwich Thins

4 whole wheat sandwich thins
4 eggs
4 slices turkey bacon, cooked
4 slices Swiss cheese

Spray a skillet with cooking spray.  Heat skillet on medium heat; fry egg until the bottom is cooked, about 3 - 4 minutes.  Flip.  Cook for 2 - 3 minutes.  Repeat with remaining eggs.

To assemble sandwiches:
Open sandwich thin; place one fried egg, one slice of turkey bacon broken in half, and one slice of Swiss cheese on bottom of sandwich thin.  Top with remaining sandwich thin.  Repeat with remaining ingredients.  These freeze well - just wrap in foil or plastic wrap and place in a freezer bag.  Easy to grab, defrost, and go!
