1 tbs olive oil
1 tbs garlic, minced
2 cups chicken broth
1 cup salsa
1 cup brown rice
cilantro to taste
In a pot, heat olive oil over medium heat. Add garlic and cook for one minute. Add chicken broth and salsa. Bring to a boil. Stir in rice. Turn heat to low; cover and cook for 40 - 50 minutes. Top with cilantro if desired.
I make a similar rice, and always felt it was missing something. I should try the garlic!
ReplyDeleteI made this rice today, it was awesome. I couldn't have asked for a more simple recipe for Spanish rice. I used white rice so the cooking time was a lot shorter too. Thanks for the recipe!
