Ham and Cheese Stuffed Chicken with Salsa



Ham and Cheese Stuffed Chicken with Salsa

4 boneless skinless chicken breasts, pounded flat
4 slices deli honey ham
4 slices white cheddar or Swiss cheese
1/2 cup margarine, melted
1 cup panko breadcrumbs
1 tsp chili powder
1 tsp paprika
1 tsp garlic powder
1 tsp Cajun seasoning

margarine
olive oil

Mix breadcrumbs, chili powder, paprika, garlic powder, and Cajun seasoning in a bowl.  In another bowl, place melted margarine.

Place 1 slice of ham and 1 slice of cheese on each chicken breasts. Fold in half and secure with a toothpick.  Dip each chicken breast into the margarine and then the breadcrumb mixture, coating well.  Spoon salsa on outer edges of chicken breast.

Melt a few tablespoons of margarine and olive oil over medium high heat in a large pan.  Cook each chicken breast for 5 - 6 minutes per side, flipping several times.  Cook until chicken is no longer pink and juices run clear.

  2. Try it! It's pretty easy and tastes like a restaurant quality dish. It's actually a recipe my dad came up with. :)
