Chocolate Chip Cookie Sandwiches
My recipe for whole wheat chocolate chip cookies
Filling - slightly adapted from smitten kitchen:
1/4 cup unsalted butter, softened
1/4 cup shortening
2 cups powdered sugar
1 teaspoon vanilla extract
Place butter and shortening in a mixing bowl. Gradually beat in the sugar and vanilla at low speed. Turn the mixer on high and beat for 2 to 3 minutes until filling is light and fluffy.
Spread a small amount of filling on the flat side of a cookie. Top with another cookie. Repeat with remaining cookies.
