2 cups buttermilk
1/2 sleeve Ritz crackers
1/2 cup Italian breadcrumbs
1/4 cup shredded Parmesan cheese
1 tsp Cajun seasoning
3 tbs margarine, melted
Cut chicken breasts into tenders. Place chicken tenders in a ziploc bag with buttermilk.
Preheat oven to 350 degrees. Place all remaining ingredients in a food processor. Pulse until crackers are crushed and everything is well mixed. Place breadcrumb mixture in a bowl. Dip each chicken tender into breadcrumb mixture, coating well on both sides.
Place all chicken in a greased 9" x 12" baking dish. Pour melted margarine over chicken. Bake for 20 to 30 minutes, or until cooked through.
