My Mac and Cheese

Whole Wheat Mac and Cheese

10 oz. whole wheat pasta
2 tbs butter
3 tbs flour
2 cups milk
1 1/2 cups shredded cheddar cheese
1 tsp ground mustard
1 tsp salt
1 tsp pepper

Cook pasta according to package directions.  Meanwhile, melt butter over medium heat.  Add flour and whisk for 2 - 3 minutes to form a paste. 

SLOWLY add milk, whisking constantly. Bring to a boil, still stirring to avoid burning. Reduce heat back down to medium.  Cook for 5 minutes, until thickened, stirring constantly.  Remove from heat; add cheese, ground mustard, salt and pepper and stir. 

Drain pasta.  Add cheese sauce to pasta and serve.
