Meatball Sandwich Thins
For sauce:
2 14 oz. cans tomato sauce
2 tbs brown sugar
1 tbs sugar
1 tbs parsley
1tbs basil
For meatballs:
1 lb ground Italian sausage
1 egg
3/4 cup breadcrumbs
1/2 tsp oregano
1/2 tsp parsley
1/2 tsp basil
1/2 tsp crushed black pepper
3 sandwich thins, split
3/4 cup Italian blend shredded cheese
Combine tomato sauce, brown sugar, sugar, parsley and basil. Simmer over low heat.
Meanwhile, combine Italian sausage, egg, breadcrumbs, oregano, parsley, basil and black pepper in a bowl. Do not over mix. Form into 24 2" meatballs and place on a greased baking dish. Bake at 375 degrees for 12 - 15 minutes, or until cooked through.
Drop meatballs into the sauce and stir to coat. Continue simmering on low heat for 30 minutes, stirring occasionally to prevent sticking.
Place split sandwich thins on a baking sheet. Place 3 - 4 meatballs on each. Top with cheese. Broil for 2 - 3 minutes, until cheese is melted and sandwich thins are crispy.
