Sweet and Sour Pork Fried Rice



There is nothing remotely authentic about this fried rice, but we love it!

Sweet and Sour Pork Fried Rice

4 boneless pork chops, thinly cut
2 tsp olive oil
1/2 cup ketchup
2 tbs soy sauce
1 tsp honey
1 tbs brown sugar
1 tsp vinegar

1 1/2 cups brown rice, cooked and refrigerated
sesame oil
3/4 cup carrots, diced
1 egg
soy sauce

Brown pork chops in olive oil over medium heat for 4 -5 minutes per side.  In a small bowl, combine ketchup, soy sauce, honey, brown sugar, and vinegar.  Brush both sides of each pork chop; cook for 5 - 8 minutes longer, flipping once. Remove from pan and dice.

Whisk egg with 1/2 tsp soy sauce.   Cook in a skillet or wok over medium heat until set.  Flip and cook for 2 minutes. Remove from pan and chop.  Add a few tablespoons of sesame oil to pan.  Saute carrots for 4 - 5 minutes.  

Add rice to pan.  Fry over medium heat for 4 - 5 minutes.  Stir in soy sauce to taste (about 1/3 cup).  Add pork chops to rice.

  1. It's "Use What's In The Freezer and Pantry Instead of Going to the Store" Day at our home. Who cares if it's authentic? It's what's for dinner tonite.
