Whole Wheat Baked Chicken Chimichangas

Whole Wheat Baked Chicken Chimichangas

6 whole wheat tortillas
2 cups cooked chicken, shredded
1/4 tsp cumin
1/2 tsp chili powder
2 tbs diced green chiles
3 oz. cream cheese, softened
1 cup grated Parmesan cheese, divided

Combine cooked chicken, cumin, chili powder, green chiles, cream cheese, and 3/4 cup Parmesan cheese.

Heat tortillas 2 at a time with moistened paper towels on top and beneath them.  Take 1/4 cup of the chicken mixture and spoon into center of each tortilla.  Fold sides over lengthwise, then fold other two ends under.  

Spray each tortilla with cooking spray. Bake for 25 - 28 minutes.  Serve with salsa, cheese, sour cream, etc.
