Cheesecake Bars



Cheesecake Bars

Crust
1 cup graham cracker crumbs
4 tbs butter, melted
1 tbs sugar

Preheat oven to 350 degrees.  Line an 8" x 8" baking dish with foil.  Spray lightly with cooking spray.  Combine graham cracker crumbs, butter, and sugar.  Press into baking dish.  Bake for 10 minutes.  Remove to a cooling rack. Reduce oven temperature to 325 degrees.

Cheesecake
12 oz. reduced fat cream cheese, at room temperature
6 tbs sugar
6 tbs sour cream, at room temperature
1/4 tsp vanilla extract
1/4 tsp salt
1 egg plus 1 egg yolk

Beat cream cheese in a large bowl with an electric mixer for 2 minutes.  Beat in the sugar until well combined.  Beat in sour cream, vanilla, and salt.  Beat in the egg and egg yolk until well incorporated.  

Pour cheesecake batter over crust.  Bake for 35 - 40 minutes, or until edges are firm but middle is still jiggly.  Cool for one hour.  Refrigerate until ready to serve. Drizzle with melted chocolate if desired.  Slice into bars.

  3. I've seen so many recipes lately for carrot cake! So far, I think yours must be the best! The other one I really like is this Pure Pumpkin Cheesecake. What do you think? Happy Baking!
